  1. Mix 2 tbsp vanilla extract ( vanilla essence )with yeast.
  2. In a large bowl add butter1/2 cup + 2 tbsp ( room temperature ), cream cheese. Beat with electric beater for 2 mins on medium to high speed.
  3. Add 1 cup sugar slowly slowly in electric mixer and beat for 2-3 minutes until light and fluffy. Then add vanilla with yeast mixture . Beat for 1 min .
  4. Now decrease speed of mixer n start adding all purpose flour 1-1/2 cup + 4 tbsp slowly slowly. Till it come together like soft dough. Then take out dough n press together to combine .
  5. Cover with cling and keep in fridge for 30 minutes.
  6. Preheat oven to 180 degrees C.
  7. In a separate bowl mix brown sugar and cinnamon powder.
  8. Now spread 1 wax paper and roll half dough in 7x18 inch rectangular size. With help of wax paper. Its thickness will be 1/4 inch. Roll very softly n gently to avoid cracks . Tip : press with fingers when it cracks from corners.
  9. Now sprinkle cinnamon and sugar on dough. Spread all over but leave the sides.
  10. ( start rolling from 18 inch side ) Now cut roll
  11. Transfer to line baking tray . Bake for 9 mins for chewy cookies at 180 degree c. Bake for 12 mins for crispy cookies at degree c. After baking make it cool for 2min. Then transfer to cooling rack very carefully.
