Arabic Kabsa is a one of the famous dish of Arabic food. We use crispy roasted chicken and rice for making this and serve with Arabic spices and Arabic Dakoos sauce.

  1. Take a whole chicken with skin wash it n dry excess water.
  2. Heat clarified butter( banaspati ) in a large deep pan .add sliced onion n fry till dark golden ( do not burn ).add whole spice ( clove ,cinnamon stick ,black pepper ,bay leave .stir fry for few seconds .
  3. Now add whole chicken with skin n fry till light golden with onion.add chopped tomato .
  4. Now add small green chilies, 1 dried lemon and all seasonings (Salt 2 tsp / Crushed Black pepper 1/2 tsp / Cumin seeds 1 tsp / Turmeric 1/4 tsp / Crushed red pepper 1 tsp ) with 6 to 8 cups water, cover and cook for at least chicken get tender .cook for 30 minutes .
  5. Now remove chicken n keep on wire rack in oven to dry excess water n get crispy .bake for 20 minute on 200 degree C till get light golden . Tip: (keep baking tray at bottom while baking to drain excess water.
  6. Now add 2 tsp salt more to the leftover stock add green cardamom powder with soaked rice, cover and cook till water dries, add 2 tbsp tomato paste .Mix well cover n cook on low flame to simmer rice.
  7. Assembling . Serve rice at base of platter .on top crispy chicken .drizzle lemon juice on top. Garnish with nuts . Serve with special dakoos sauce
  8. Method for sauce : Heat oil 3 tbsp add garlic paste, stir for 1 minute add chopped tomato and tomato paste with half cup water, cook for 10 minutes add seasonings( curry powder 1/2 tsp ,salt 1 tsp . Green cardamom 1/2 tsp and 1 dry lemon, cook till thick.Remove dry lemon before serving .serve with Kabsa .
  9. Serve whole chicken or cut chicken into 6 to 8 pieces for individual serving on cutting board.
