afghani pulao


Afghani pullao is a Asian Cusine .Combination of meat ,rice n caramelized carrot n raisins serve together with different ground powder.

  1. First cook meat with 1 tsp salt, 1 tbsp ginger garlic paste n 4 cup water . Cook till meat get tender n 2 cup stock remain. ( strain the meat n keep aside
  2. In a separate pan add 1/2 cup oil .add sliced onion fry till light golden .now add cooked meat n stir fry with onion for a minutes n remove keep aside.
  3. In a same pan add sugar n melt on low flame till get caramelized in brown Colour .add 2 cup meat stock ,salt n soaked rice on high flame
  4. While cooking rice ( basmati or sella ) in between add grinded mix spice powder ( 1 tbsp cumin ,1 stick cinnamon ,10 whole black pepper ,2 black cardamom )grind altogether .mix well in rice n cook till water dry n cover n simmer rice till done .
  5. In a pan add 2 tbsp oil or butter add 4 tbsp raisin .stir fry .add 3 tbsp sugar n cook till get melt .on top add 1 cup Jullien thinly sliced carrot.stir fry n keep aside
  6. Assembling : In a serving dish spread cooked rice .then onion n meat mixture n on top raisin n carrot caramelized. Garnishing with almond n pistachio .
